Japanese Roll cake – with matcha tea and kidney beans

Japanese Roll cake is prepared on a light biscuit base, spread with a filling of your choice and rolled on itself. This one is Japanese inspired with the use of green matcha tea for scented biscuit, and sweet red bean paste in garnish.

Matcha green tea is a finely ground green tea powder. It is widely used in Asian pastries. (Like the tea cake!) It colors the dishes and perfumes delicately.

Sweet Red bean paste is widely consumed in Japan. It is also widely used in Japanese sweet recipes. Its taste is very sweet and delicate. You can buy it ready-made (like me) in Asian groceries or on Amazon. Red bean paste is native to China but is widely used in Japan too. It is widely used in Asian pastries and biscuits.

Matcha green tea and red bean paste are often used together because their flavors blend well.

Preparation of the Japanese roll cake

Mix the Matcha powder with 50ml hot water.

In a bowl, mix the flour, egg yolks and sugar.

Add the tea.

Beat the egg whites until they form peaks. Incorporate delicately to the tea mix.

Lay a sheet of kitchen paper on a baking tray. Pour the mix on it and smoothen with a spatula.

Bake in the oven at 180°C (350°F) for 10/12 minutes.

Leave to cool a bit. Spread some sweet red beans paste on the pastry.

Finally roll the cake. Sprinkle icing sugar just before serving.
