No sugar added chocolate muffin

I made this one for the teachers at my daughter’s daycare and they loved it. So I decided to share these delicious no added sugar chocolate muffin with you!

Ingredients for the no sugar added chocolate muffin

  • 2 eggs
  • 3,5 oz butter (100g)
  • 3,5 oz of apple syrup (100g)
  • 3,5 oz of flour (100g)
  • 3,5 oz of wholemeal flour (100g)
  • 0,18 oz of baking soda (5g)
  • 3,5 oz of chocolate 70% chopped (100g)
  • 3,5 oz unsweetened natural yoghurt (100g)

Preparation of the no sugar added chocolate muffin

Preheat oven to 170 °.

Begin by beating the eggs.

Add yoghurt, apple syrup and melted butter.

Mix.

Add the 2 flours and the yeast.

Mix until a homogeneous paste is obtained.

Finally add the chocolate 70% coarsely chopped.

Pour dough into muffin cups, fill to 2/3. (The dough will swell).

Bake for 25 minutes.

Good To know:

To make an apple syrup is very simple! Simply boil apple juice for 15 to 20 minutes, until the juice has reduced well. This will concentrate the sugar of the apple and give the sweet taste to the dessert.
