Ingredients for a dozen of pesto and ham toastie
- 5 bread rolls
- A glass of extra virgin olive oil
- 150 pine nuts
- 30 fresh basil leaves
- 200g Parmesan
- Salt, Pepper
Preparation of the pesto
Preparation: 15 minutes
Start by lightly cooking the pine nuts in a pan until they are just golden.
Wash the basil and cut all the leaves. Mix in a blender the fresh basil leaves, the pine nuts, the grated Parmesan and the olive oil.
Blend all the ingredients and season to taste.
Preparation of the pesto and ham toasties
Cut the bread rolls in half and grill them lightly in the grill or toaster.
Spread the pesto on the toast and add a slice of Italian ham. Serve straight away.
You can keep the pesto in the fridge for up to a week, and serve it with pasta.

Pesto is a sauce which originally comes from the North West of Italy. It has numerous variants: Pesto rosso, with tomatoes, winter pesto with spinach… It is used in pasta dishes, but also on toast or to give flavour to soup.
To enjoy fresh basil throughout the summer, buy it in a pot in spring. You will have delicious fresh leaves for months.
