Salted caramel ganache

The salted caramel ganache is very easy to cook and you can use it to fill your homemade macarons or to spread on French crêpes. It will be a great success for sure!

Ingredients for the salted caramel ganache

  • 140g of sugar
  • 65g of cream
  • 100g of salted butter at room temperature

Ingredients for about 20 macarons

  • 150 g of powdered sugar
  • 85 g of almond flour
  • 20 g of granulated sugar
  • 65 g of egg whites

Start with your ganache, then make you macarons shells with our French macaron recipe.

Be sure to prepare all the necessary kitchen tools for your macarons before you start!

Preparation of the salted caramel ganache

In a pan, make a caramel with the sugar. It has to melt slowly. When it’s just golden, remove from fire and add the cream in 2 times. (Careful, it’s hot!) Mix.

And add the butter.

Put in the fridge for at least 40 minutes before using it.

Piping your French macarons

Open the pastry bag with scissors. In a sheet pan coated with your silicon mat, you can start to pipe your macarons. Keep your hand straights. Don’t move when you pipe, the batter is going to spread by itself.
