We call this brioche a classic French brioche because this is the basic version of brioche. It is also one of the easiest recipe to prepare.
The secret to have a nice brioche is that you need to mix the dough 5 to 10 minutes. This is why it is easier to have a stand mixer. But you can also mix with your hands, that’s perfect if you want to exercise a bit!
Preparation: 20 minutes + 3 hours

Ingredients for the French brioche:
- 250g of flour (0,55 lb)
- 25g of sugar (0,05 lb)
- 3 eggs
- 4g of dry active yeast (0,008 lb)
- 25g of milk (0,05 lb)
- 8g of salt (0,016)
- 130g of butter (0,28 lb) at room temperature, very important!
- Pearl sugar
Preparation of our delicious classic French brioche
In a glass put warm water (Not hot, not cold!) and the yeast. Mix with a spoon. Leave for 3 minutes. (The yeast is going to wake up!)
In the mixer bowl, combine the eggs, milk and yeast.
Add the flour, sugar and salt, then mix everything at slow speed using the hook until the dough comes off the edges of the bowl.
Add the butter, and mix until the dough comes off the edges of the bowl. You should mix 5 to 10 min.
Remove the hook, and let the dough rise for one hour at room temperature (the dough must double in volume).
Then « fold » on the worktop, it should be flattened slightly with the palm of your hands, to evacuate the carbon dioxide that the brioche contains.
Then put the brioche in the fridge and let it cool for 1 hour.
Put the dough on a loaf pan covered with parchment paper and let rise at room temperature for 1 hour.
Preheat the oven to 180 ° C. (360 ° F)
Once the brioche doubled in size, brush the top with an egg yolk over the whole surface. Sprinkle with pearl sugar.
Cook for 15 minutes.
