Tasty courgette, broccoli and parmesan soup

A new winter soup to add to your test list! This one is very greedy! Far from a diet soup, without being too rich, it is perfect for a complete meal. Broccoli and zucchini for vegetables, a touch of cream and parmesan, for the gourmet touch! ;-)

The broccoli season runs from June to October. In addition to being delicious, this green vegetable is rich in anti-oxidants and vitamins C. The zucchini have about the same seasonality as broccoli, so you can find them fresh at the same time. As for Parmesan, it adds a gourmet touch to this broccoli soup.

 

Ingredients for the brocoli soup

  • 3 zucchinis
  • 200g broccoli
  • 4 potatoes
  • 2 oignons
  • 20cl crème fraiche
  • 2 garlic cloves
  • 200g shaved parmesan
  • 1l of stock

 

Preparation of the brocoli soup

Clean the courgettes and cut in thick slices. Clean and cut the broccoli. Peal and chop the oignons. Fry for a few minutes in olive oil. Add the greens and the pealed garlic cloves.

Peal the potatoes and cut them into cubes. Add them to the greens.

Finally, add the stock. Leave it to simmer for about 10 minutes. Blend in the food processor with the cream. Serve in bowls sprinkled with parmesan.
