If you don’t know the speculoos cookies from Belgium, this recipe is perfect to introduce you to them. Crusty with a slight flavor of cinnamon, they pair perfectly with coffee.

Ingredients for the tiramisu with speculoos cookies

Serves 6 :

  • 3 eggs
  • 150 g sugar
  • 250 g mascarpone 
  • 10 cl Marsala (or dark rum)
  • 15 spéculoos cookies
  • 30 cl cold coffee
  • 1 pinch of salt
  • 3 tbsp cocoa powder 

Preparation of the tiramisu with speculoos cookies

Make the coffee and set aside in a deep plate.

Separate the whites and yolk of the eggs. 

Beat the yolks with the sugar until the mixture whitens, then add the mascarpone and the Marsala (or the dark rum).

Beat the whites with the salt until stiff peaks form, then add them to the previous mix.

Dip the speculoos cookies very quickly in the cold coffee. Lay them at the bottom of a large rectangular ovenproof dish, and cover with the mascarpone mix. Repeat this last step one more time.

Place in the fridge for 2h minimum, then sprinkle with cocoa powder using a small sieve just before serving.
