Warm goat cheese salad

For 2 people – 15 min prep

  • For the salad:
  • 2 slices of baguette
  • 2 thick slices of goat cheese
  • 2 tbsp. honey
  • 2 tbsp walnut kernels
  • 1/ lb of salad
  • 10 cherry tomatoes
  • Black pepper, freshly ground 
  • For the vinaigrette:
  • 3 tbsp. tablespoon of olive oil
  • 1 tbsp. balsamic vinegar
  • • 1 tbsp. honey
  • • Salt and pepper
  1. Preheat the oven to 350 F°. 
  2. Place slices of bread in baking sheet lined with parchment paper. 
  3. Arrange slices of goat cheese over each slice, and add a 1 tbsp of honey.
  4. Bake for 5 to 8 minutes, until the goat cheese becomes lightly browned.
  5. Meanwhile, arrange the salad on the plates.
  6. Decorate with cherry tomatoes and walnuts, then place the slices of bread with the goat cheese on top. Sprinkle with a little freshly ground pepper.
  7. Mix all the ingredients of the vinaigrette sauce in a small bowl and pour generously over the salad on each plate.
  8. Serve while the goat cheese is hot.
