For 2 people – 15 min prep
- For the salad:
- 2 slices of baguette
- 2 thick slices of goat cheese
- 2 tbsp. honey
- 2 tbsp walnut kernels
- 1/ lb of salad
- 10 cherry tomatoes
- Black pepper, freshly ground
- For the vinaigrette:
- 3 tbsp. tablespoon of olive oil
- 1 tbsp. balsamic vinegar
- • 1 tbsp. honey
- • Salt and pepper
- Preheat the oven to 350 F°.
- Place slices of bread in baking sheet lined with parchment paper.
- Arrange slices of goat cheese over each slice, and add a 1 tbsp of honey.
- Bake for 5 to 8 minutes, until the goat cheese becomes lightly browned.
- Meanwhile, arrange the salad on the plates.
- Decorate with cherry tomatoes and walnuts, then place the slices of bread with the goat cheese on top. Sprinkle with a little freshly ground pepper.
- Mix all the ingredients of the vinaigrette sauce in a small bowl and pour generously over the salad on each plate.
- Serve while the goat cheese is hot.
